The Pot Still Alembic Condenser is best used with the T500 Boiler and the Pot Still Alembic Dome Top. You can use this with the T500 Boiler without the Pot Still Alembic Dome Top, to do this it fits on to the lid of the T500 Boiler. This condenser is what differentiates this still from the T500. It is what retains the flavour rather than stripping it out by refluxing. This comes with a thermometer, tubing and tap adaptor set.

Description
Barrel aged beers have become increasingly popular in the craft beer fraternity and by beer aficionados the world over. Beer aged or served from wood is not a recent phenomenon by any means; beer was kept in wooden casks and vats until the advent of first aluminium and then stainless steel casks. The big difference between that and the barrel aging technique is the use of barrels from another drinks industry to add different character to a type of beer, sherry, bourbon, scotch, rum, wine and other barrels have all been used to great effect. Part of the art of barrel aging is creating beer that has both the character of the barrel and the character of the original beer.
We’ve melded together the character of a strong American ale, heavily toasted oak barrel and Rum to create a triumphantly aromatic and complex beer that suits contemplative drinking studying the myriad of overlaid flavours and aromas.

INGREDIENTS
Malt Extract, Hops, Hop Extract, Dried Brewing Yeast.
Creates a traditional Jamaican , full flavoured rum with molasses and caramel aromas.
Instructions:
Add sachet contents to 1.125 L (1.2 US qt) of 40% ABV alcohol. Rinse out any remaining essence from the sachet with some of the alcohol.
An active single culture yeast strain with a blend of yeast nutrients, enzyme, vitamins and trace minerals specially formulated for distilling and making gin.
This yeast strain is based on a very clean strain for a clean spirit, which makes for a perfect base spirit for infusion with botanicals and therefore gin making.
The nutrient is optimised specifically for reliable fermentation of high quality spirit, and the enzyme included is specifically suited for when using non refined sugar substrates.

Instructions: Leave to ferment between 12-28ºC (54-82ºF) ambient air temperature. Cooler fermentation will yield cleaner spirit.

Creates a dark, sweet, mellow rum styled on the seafaring rums of old.
Instructions:
Add sachet contents to 1.125 L (1.2 US qt) of 40% ABV alcohol. Rinse out any remaining essence from the sachet with some of the alcohol
A specialist active dried rum distiller’s yeast. This strain produces an optimum congener profile, producing fruit esters and aromas, making it ideal for rum spirit. It is also highly viable and robust, ensuring a short lag phase and reduced risk of bacterial infection.

Flocculation: Very Low
Alcohol Tolerance: 15%
Well Suited Style: Rum
Sufficient for up to: 25 L (6.6 US Gal) fermentation.
Instructions: Leave to ferment between 20-28ºC (62-68ºC) ambient air temperature for optimum performance and quality.
Ingredients: Dried yeast, yeast nutrients, amyloglucosidase enzyme, anti foaming agent, vitamins, trace minerals.
NOTE: Distiller’s Yeasts are designed for use when making spirit in the more traditional way, i.e. molasses.

Keep your condenser water flow constant! This handy flow regulator will attach between your water source and the water inlet on your still. The built in pump will then ensure your still has a constant and steady supply of water. Meaning a much easier and consistent distillation. You no longer have to worry about your column temperatures change from a quick trip to the bathroom or other drops in water pressure during the distillation process.

Unlike reflux stills that are engineered to strip flavour to produce clean, neutral spirits, the copper surface area of this pot still dome and condenser enables it to carry over the distinct flavours and aromas of a wash into the final product, creating a full-flavoured spirit. This makes it ideal for creating flavoursome spirits like whiskey, bourbon, rum, and gin. Also suitable for distilling water and hydrosols.
The T500 Alembic Condenser when paired with the Alembic Dome Top is compatible with the Grainfather G30, making it ideal for crafting all-grain spirits.

Auto reset switch for the T500 Boiler, replaces the push version
We are pleased to announce that the Still Spirits T500 Boiler has been upgraded!
The T500 Boiler now features dual element control switches, a stainless steel ball valve tap, and an automatic reset switch.
The dual element control switches provide more control during distillation. When both switches are in the ON position, the element will be supplied full power of 2200W. When one switch is in the OFF position, it will only consume 1100W of power. Adjusting the power can be useful in areas with warmer tap water for cooling and for use with the Alembic Pot Still.
The T500 Boiler is the recommended boiler base for use with the T500 Reflux Condensers and Alembic Dome & Condenser. It is made from 304-grade stainless steel.
The Large Copper Parrot Head is a distiller’s parrot that provides the convenience of continuous, real-time, in-line ABV measurement of the spirit as it comes out of the still. Designed for use with the T500 Reflux and Alembic Distillery Systems, this proofing parrot will let you track the ABV of your distillate without having to take samples along the way. This allows you to closely monitor the quality of the distillate and determine where to take cuts or stop your distillation.

This tasty Australian style gold rum is rich in sweet molasses and caramel notes.
We are discontinuing the Queensland Gold Rum (Item #:30156), as our lab was able to develop a much more premium flavour that tastes even closer to the commercial Bundaberg Rum.
